DAY 2… Still don’t like black coffee

Day 2 up in here of WHOLE30, and I feel pretty great today…. despite the fact that I still am freaking not feelin this black coffee. It’s not HORRIBLE, but I am definitely savoring it like usual.  I am not really expecting the typical “hangover feeling” many people get, because I didn’t really consume much sugar going into this. Let’s hope its smooth sailing…

 

So since I am at the beginning of this, at this point don’t have a huge amount to tell you. So, I made a list of a few bullet points describing my feelings on day 2…

-I can’t stop peeing

-I’m feeling really good

– I am DEF not starving

– I am Pretty full actutally

– Still miss milk in my coffee

-The  Beef and squash soup was amaZeballs last night, another win per Hayden!

– I slept great

– My workouts aren’t suffering

– I’m dreaming about Starbucks and my kids are taunting me about it

– Avocados are life

– The recipes are endless –

-I still don’t like cooking in the morning …or talking, unless it’s at Starbucks

Side note- what workout benches do my fit friends all use? I have the GOLDS GYM one from Walmart, and it’s a royal pain in my ass at the moment…. to change the incline is RIDIC…. and takes forever, I have to pause my workout…. It really doesn’t do a lot for my tested patience.  Or suggestions on making this easier, BY ALL MEANS, LET ME HEAR THEM.

Here is a pic of my delish Beef Stew from last night, w the recipe !

Ingredients

2lb Butternut Squash, peeled and cubed

3 – 4 tbsp Olive Oil

1 large onion

chopped 2lb lean beef chuck 32oz Beef Stock (gluten free)

2 garlic cloves

crushed sprig fresh thyme, 

sprig of rosemary

1 tsp salt 1 tsp pepper

Instructions

Prepare the squash by peeling it, removing the seeds and cutting it into cubes. If your beef is not already cut into pieces then cut it up into cubes, and the same for the onion. Heat the oil on a medium heat in a large pot with a solid bottom, then add the onion and saute for a couple minutes, now add the beef and brown it for a couple of minutes. Add the beef stock, herbs, salt and pepper. Cook it on the stove top on a low simmer for about an hour with a lid on the pot, do not boil. Finally add the butternut squash and cook for a further 30 minutes or until beef is tender. SLOW COOKER INSTRUCTIONS: Follow the directions as before and saute the onions and brown the beef. Now you want to add the beef, onions, butternut squash and all remaining ingredients into the slow cooker. Cook it on low for 5 – 6 hours, or high for about 3 – 4. how long it takes will depend on the heat of your slow cooker . I have two slow cookers and the newer one is hotter on the high and low settings than the older one.
